INGREDIENTS

3 tablespoons olive oil
1 1/4 lbs small clams , scrubbed
4 garlic cloves , finely chopped
2 shallots , finely chopped
3/4 cup dry champagne (or other sparkling wine)
2 tablespoons fresh parsley , chopped
6 tablespoons unsalted butter , chilled, cut into tablespoon-sized pieces

Summer Clams With Balsamic Vinegar

INGREDIENTS

2 lbs small clams (tiny manilas or larger littleneck clams)
2 quarts cold water
2 tablespoons salt
3 tablespoons extra virgin olive oil
3 tablespoons onions , Minced
1 garlic clove , Minced
1 large vine ripened tomato , cored, seeded, chopped
3 teaspoons fresh basil , chopped
1-2 tablespoon commercial balsamic vinegar
salt and pepper
2 bunches arugula or romaine leaves , for garnish

INGREDIENTS

24 medium clams , each about 2 inches across, see Note
4 slices bacon , finely chopped
1/3 cup dry unseasoned breadcrumbs
1/4 cup parmesan cheese , grated
1 teaspoon fresh oregano , chopped
1/4 teaspoon garlic powder
1/8 teaspoon ground black pepper

INGREDIENTS

1 egg
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup flour
1/2 teaspoon baking powder
1/2 cup milk

DIRECTIONS

Add salt and pepper to flour and baking powder.
Mix egg and milk together.
