Crock Pot Manhattan Clam Chowder

INGREDIENTS

2 (6 1/2ounce)cans clams
2 medium potatoes , cut into 1/2 inch cubes
1 (14 1/2ounce)can diced tomatoes , undrained
1 1/2 cups spicy tomato juice or vegetable juice
1 large diced onion
4 stalks celery , chopped
1 green pepper , chopped
1 bay leaf
4-5 sprigs fresh thyme
4 slices bacon , cooked and crumbled

Drain the clams (saving the juice) and put clams into the fridge.
In a 3.5 or 4 quart slow cooker, combine clam liquid, potatoes, tomatoes, tomato juice, onion, celery, green pepper, bay leaf, and thyme.

Canned Clam Chowder Made Better

INGREDIENTS

2 (18 1/2ounce)cans ready to serve New England clam chowder
1 (6 1/2ounce)can chopped clams
1/2 teaspoon dried thyme
1/4 teaspoon fresh ground black pepper
4 slices bacon , cooked crisp and crumbled

DIRECTIONS

Pour soup into 2 quart sauce pan.

Add chopped clams and 2 tablespoons of juice from clams.

Add thyme, salt and pepper.

Stir all together and heat over medium heat until bubbly then let simmer on low for 20 minutes.

INGREDIENTS

3 (6 1/2ounce)cans clams , drained (reserve 1/4 cup liquid)
2 eggs , separated
1 cup flour
2 teaspoons baking powder
1/4 cup butter , melted
1/2 teaspoon salt
1/2 teaspoon pepper
oil (for deep frying)

DIRECTIONS

Combine clams, liquid and egg yolks in a medium bowl.
Add flour. baking powder, melted butter, salt and pepper.

1/2 cup breadcrumbs

Lower-Fat New England-Style Clam Chowder

INGREDIENTS

2 tablespoons butter
1 cup fat-free half-and-half
1 (12ounce)can low-fat evaporated milk
2 (12ounce)cans canned clams , with juice
1 (8 3/4ounce)can corn
1 potato , cubed
1 small onion , sliced
2 tablespoons cornstarch
1 teaspoon parsley
