DAY Recipe

This sophisticated appetizer from Aqua in San Francisco is nice for a special occasion.

Makes 8 servings.

INGREDIENTS
for potato cakes
28-ounce russet potatoes
1/4cup chopped fresh chives
1large egg whitevegetable oil (for frying)for egg mixture
3hard-boiled eggs, finely grated
1tablespoon chopped fresh parsley
1tablespoon chopped red [...]

INGREDIENTS

15 1/2 ounces black beans or pinto beans , drained and rinced
11 ounces corn , drained
2 medium tomatoes , seeded and diced
1 large avocado , diced (or 2 small)
3 green onions , diced
1 cup fresh cilantro , chopped
1/2 cup salsa
3/4 teaspoon salt
1/4 teaspoon black pepper

DIRECTIONS

Combine all ingredients in a large bowl. Gentle toss to combine.
Chill for 30 minutes to one hours. Serve over greens as salad or with chips for dipping.

INGREDIENTS

1 green pepper , chopped
1 small red onion , chopped
1 (15ounce)can pinto beans
1 (15ounce)can black-eyed peas
1 (15ounce)can white corn
1/3 cup white vinegar
1/3 cup sugar

DIRECTIONS

Drain corn, beans and peas.

Combine the pepper, onion, and all cans into
large bowl.

Boil the vinegar, add sugar and stir until dissolved.

Pour over vegetables, and stir.Refridgerate overnight.

Serve with Fritos Scoops.

INGREDIENTS

2 (15ounce)cans black beans , drained & rinsed
2 tablespoons prepared black olive tapenade
2 tablespoons ricotta salata , crumbled
2 tablespoons extra-virgin olive oil
2 garlic cloves , minced
1/2 teaspoon black pepper , freshly ground

DIRECTIONS

Combine all in a large bowl and coarsely mash with a wooden spoon.
Transfer to a serving bowl and serve with pita wedges.

INGREDIENTS

1 (8ounce)package cream cheese , softened
1/4 cup mayonnaise , such as Helmann’s
1 tablespoon fresh lemon juice
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
1 medium onion , grated
1/4 teaspoon worcestershire sauce
1 pinch salt
1/4 teaspoon Tabasco sauce
1 (2ounce)jar caviar

DIRECTIONS

Combine all ingredients, except caviar with a mixer.At this point, the cheese mixture may be frozen for future use.

Place in a serving dish and top with caviar.

Serve with party crackers!
