Carol’s Wisconsin Beer Cheese Soup

INGREDIENTS

1 small onion , finely chopped
1/2 carrot , finely chopped
1 garlic clove , minced
1 teaspoon worcestershire sauce
12 ounces beer (I prefer Sam Adams larger)
2 cups chicken broth (or canned 15 oz.)
1 tablespoon butter
3 tablespoons cornstarch
2 cups half-and-half cream , andor
1 cup skim milk , and
1 cup cream
2 cups shredded cheddar cheese
3 tablespoons flour
1/3 cup water
2 cups popped popcorn (optional)

Carol’s Chicken Pot Pie

INGREDIENTS

4 skinless chicken breast halves , grilled (cut in medium sized pieces)or
3 cups left over rotisserie chicken (cut in medium sized pieces)
2 carrots , cut 1/4-inch thick
1 medium sweet onion , coarsely chopped
6 small red potatoes, unpeeled and quartered
2 cups chicken broth
1 cup sweet peas
1 cup mushrooms , sliced
3 cups beer cheese soup (I use Carol’s Wisconsin Beer Cheese Soup, more or less as needed)

Carol’s Banana Pudding

INGREDIENTS

1 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon salt
2 cups milk (whole or 2%)
1 teaspoon vanilla extract
1 tablespoon butter (not margarine)
4 large egg yolks
1 (12ounce)box vanilla wafers (Nabisco is best)
4-5ripe bananas
MERINGUE
4 large egg whites (at room temperature)
5 tablespoons sugar
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract

Bad Carol’s Cranberry Delight

INGREDIENTS

8 ounces cream cheese
1/4 cup lemon juice
2 cups mini marshmallows
1 (16ounce)can whole cranberry sauce
1 (20ounce)can pineapple tidbits , drained and reserve juice
1/2 cup chopped pecans
1 (8ounce)container whipped topping

DIRECTIONS

Have cream cheese at room temp and on med speed beat till smooth.
Add pineapple juice and lemonjuice blend well.
Add cranberry sauce,nuts,pineapple and marshmallows; blend well.
Fold in whipped topping and blend well till color is mixed even.

Carol’s Lasagna

INGREDIENTS

1 (15ounce) low-fat ricotta cheese
2 eggs , beaten
8 ounces mozzarella cheese
1/2 cup parmesan cheese , divided
1/2 (16ounce)package lasagna noodles
8 ounces fresh mushrooms , sliced
2 (24ounce)jars pasta sauce
1 lb ground beef, browned

DIRECTIONS

Cook and drain pasta as directed on package.
