INGREDIENTS

2 cups mayonnaise
1 (3 1/2ounce)jar capers , drained
3 garlic cloves , pressed
1/4 cup Dijon mustard
9 cups water
1/4 cup Old Bay Seasoning
3 lbs fresh shrimp , unpeeled, medium-size

DIRECTIONS

Combine mayonnaise and next 3 ingredients in container of an electric blender or food processor; process until smooth, stopping once to scrape down sides.

Cover tartar sauce and chill 2 hours.

Combine 9 cups water and seasoning in a Dutch oven.

INGREDIENTS

4 large eggs
4 tablespoons freshly grated parmesan cheese , divided
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh oregano
1 teaspoon Dijon mustard
1/4 teaspoon fresh ground black pepper
1/8 teaspoon salt
2 tablespoons olive oil
3 baby portabella mushrooms , stemmed, thickly sliced
4 teaspoons drained capers

Basil Caper Tartar Sauce

INGREDIENTS

1 cup mayonnaise
1/2 cup dill pickle relish, drained
1/4 cup minced onions
3 tablespoons finely chopped fresh basil
2 tablespoons capers , drained
1 teaspoon caper juice , from caper

DIRECTIONS

Combine all ingredients in a small bowl; cover and chill.

Fish Fillets With Caper Mayonnaise

INGREDIENTS

1 lb fish fillets, white fish
2 teaspoons oil
salt
pepper
3 tablespoons mayonnaise
1 1/2 tablespoons capers , coarsely chopped
1 1/2 teaspoons parsley , minced
lemon slices

DIRECTIONS

Arrange fish on baking sheet.
Brush with oil and sprinkle with salt and pepper.
Combine mayonnaise, capers and parsley; spread on top of fillets.

Bake in 425F oven 8 minutes for fresh fish, and then broil for 2 minutes until golden brown.
Garnish with lemon slices.

Garlic Olive Caper Spread

INGREDIENTS

1 cup Greek olives, rinsed and pitted
2 tablespoons capers
1 garlic clove , minced
1/2 cup pine nuts
1 tablespoon olive oil
1 tablespoon lemon juice
1/2 teaspoon thyme or basil
1/4 teaspoon black pepper
1 1/2 cups fresh parsley , stems removed

DIRECTIONS

In a food processor or blender, combine all of the ingredients and process until just smooth enough to spread.
