INGREDIENTS

1/3 cup light brown sugar , firmly packed
2 tablespoons cornstarch
3egg whites, lightly beaten
1 egg , lightly beaten
1 (12ounce)can evaporated skim milk
1 teaspoon vanilla extract
1 (8ounce)container reduced-fat cream cheese
1 1/2 cups raspberries
8 teaspoons light brown sugar

Combine first 5 ingredients in the top of a double boiler; stir well. Cook over simmering water 4 minutes or until thickened, stirring constantly with a wire whisk.

INGREDIENTS
Cranberry Sauce
3/4 cup sugar
1/4 cup orange juice concentrate
1 cup cold water
12 ounces fresh cranberries
Custard
4 cups heavy cream
1/2 vanilla bean
8 large egg yolks
1/2 cup sugar , plus
8 teaspoons sugar , for caramelization

Cranberry Sauce: in a large saucepan, combine the sugar, orange juice concentrate, and water; stir to dissolve the sugar and bring to a boil.
