Brine for Turkey or Chicken

INGREDIENTS

1 gallon water
1 cup kosher salt
1 ounce tender quick
1 cup honey or molasses or real maple syrup
3 bay leaves
1/4 teaspoon ground cloves
1/2 teaspoon pickling spices

DIRECTIONS

Mix ingredients and bring to a boil.

Allow brine to cool to 40 degrees.

Place bird in brine. Make sure turkey/chicken is fully submerged. You may need to put a weight (rock, etc) inside a ziplock bag and place inside turkey/chicken to keep the bird submerged.

INGREDIENTS

2 1/2 gallons cold water
2 cups kosher salt
1 cup sugar
2 bay leaves , torn into pieces
1 bunch fresh thyme or
4 tablespoons dried thyme
1whole head of garlic , peeled
5 allspice berries , crushed
4juniper berries, crushed

DIRECTIONS

Place the water in a large pot that can easily hold the liquid and the meat you intend to brine.

3 Spice Pickled Beets Brine

INGREDIENTS

2 cups water
2 cups apple cider vinegar
2 cups sugar
1 teaspoon cloves
1 teaspoon allspice
1 tablespoon cinnamon

DIRECTIONS

Mix ingredients in a medium saucepan.
Bring to a boil and stir until sugar is dissolved.
Pour over cooked sliced beets in pint jars.
Process jars per appropriate canning method.I use the water bath method and process for 30 minutes (for our elevation).

White Wine Turkey Brine, Simple

INGREDIENTS

750 ml white wine
6 bay leaves
1 head garlic
1 medium onion , cut in half
1 cup kosher salt
1 cup brown sugar
10 cups water
2 large lemons

DIRECTIONS

Add bay leaves, garlic, onion, salt, sugar and water to a large stock pot.

1 cup granulated sugar
2 bay leaves
1 bunch fresh thyme (or 1/4 cup dried)

5whole crushed allspice berries
4juniper berries, smashed
