INGREDIENTS

2 tablespoons cooking oilor butter
15 ounces diced fresh new potatoes
8 ounces breakfast sausage links
1 tablespoon minced mild green chilies (canned)
1/2 cup minced onions (sweet, white, or none)
1/2 cup chopped roma tomatoes (cherry or grape toms are good too)
1/2 cup red peppersor green peppers
10-12 eggs
6-8 slices American cheese (or whatever you prefer)
6 (8inch) flour tortillas

Breakfast Pie

INGREDIENTS

1 (9inch) unbaked pie shells
1 (8ounce)can apple pie filling
1 lb hot sausage
1 cup grated sharp cheddar cheese
1/4 cup soft butter
1/2 cup brown sugar
2/3 cup flour

DIRECTIONS

Pour pie filling in the pie crust, top with sausage and cheddar cheese.
Prepare streusel topping and place on top of other ingredients.
Bake at 375 degrees for 35-40 minutes until crust is golden brown and center is hot.

INGREDIENTS

1 teaspoon extra virgin olive oil
3 small shallots (chopped)
1fire roasted peppers (I used the kind that is comes in a jar)
2 slices turkey bacon (chopped in small cubes)
1/4 teaspoon herbes de provence
1/2 cup nulaid egg substitute
salt and pepper (to taste)

Breakfast Smoothie

INGREDIENTS

1 large banana
3 cups kale
2 cups strawberries
1 cup blueberries
2 tablespoons flax seeds
1 cup soymilk
water

DIRECTIONS

Blend all ingredients in blender, adding water as necessary.

A Vitamix or other high-powered blender is best for this recipe.

Christmas Breakfast Casserole

INGREDIENTS

1 (8 1/2ounce)box Jiffy corn muffin mix (or your favorite corn bread recipe)
1 egg
oil
water
2 (8ounce)packages link sausage
2 (16ounce)cans whole berry cranberry sauce

DIRECTIONS

Cook sausages according to package directions and cover the bottom of an 8×8" glass baking dish with the cooked sausage.
