Brandied Blue Cheese & Dates on Crackers

INGREDIENTS

5 ounces blue cheese
3 ounces cream cheese
1 teaspoon brandy
1 teaspoon fresh chives (chopped)
4 dates (pitted)
25water crackers
fresh parsley sprigs (to garnish, or use dry parsley flakes)

DIRECTIONS

Beat cheeses, brandy & chives in a sml bowl w/an electric mixer till well-combined.

Slice dates into very fine strips.

Just b4 serving, spread or pipe cheese mixture onto crackers & top w/date strips & parsley.

Brandied Cranberry-Orange Sauce

INGREDIENTS

3 cups cranberries
1 orange , chopped fine
2 cups sugar
1 teaspoon ground ginger
1 dash cinnamon
1 dash cloves
1 dash cardamom powder
1/3 cup brandy

DIRECTIONS

Preheat oven to 300 degrees.
Place cranberries and chopped orange in a 13 x 9" baking dish; sprinkle evenly with sugar and spices.
Bake one hour, stirring after 30 minutes.
Add brandy, stir until well blended. Pour into jars or serving dishes. Serve chilled.

INGREDIENTS
peaches
4 peaches , peeled and sliced
3 tablespoons butter
1/2 cup sugar
1/4 cup peach brandy
Custard
2 cups heavy cream
4 eggs
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1unbaked pie shell

DIRECTIONS

Preheat the oven to 450°F.
For the peaches:.
Over high heat, in a sauté pan, heat the butter.
When the butter is hot add the sugar. Stir until the sugar is dissolved.
Add the peaches and sauté for 5 minutes, or until the sugar starts to turn dark amber in color.

Brandied Cherry Sundaes for 2

INGREDIENTS

1 (8ounce)can pitted dark sweet cherries
1 teaspoon brandy flavoringor brandy
1/2 pint vanilla ice cream or frozen yogurt

DIRECTIONS

Heat cherries.

Stir in 1 teaspoon brandy flavoring or brandy.

Divide ice cream between 2 dessert dishes.

Spoon warm cherry sauce on ice cream.

Can substitute vanilla pudding for ice cream.

Brandied Chocolate Fruitcake

INGREDIENTS

1 cup candied pineapple, diced
1/2 cup candied cherries, halved
1 cup raisins (seedless)
1 cup brandy (if not more)
4 ounces unsweetened chocolate
3/4 cup butter
1 1/2 cups sugar
6 eggs , separated
2 cups flour , sifted
1 teaspoon baking powder
3 cups pecans , coarsely chopped

DIRECTIONS

Combine candied pineapple, cherries, raisins, and 1/2 cup brandy in a small bowl.Cover and let stand overnight.
