INGREDIENTS

2 cups broccoli , coarsely chopped
1/2 cup red bell peppers , julienne-cut (1- x 1/4-inch)
1/4 cup purple onion , chopped
1/4 cup red wine vinegar
1 teaspoon vegetable oil
1 teaspoon dark sesame oil
1/4 teaspoon salt
1/4 teaspoon cracked pepper

INGREDIENTS

4 chicken breasts
1 tablespoon caraway seeds
1 cup red grapes , quartered
1/2 cup mayonnaise
1/2 cup chopped walnuts
1/4 medium red onion , chopped
2 stalks celery , chopped
12 leaves romaine lettuce , boat leaves (in the ready made salad section, you may substitute with belgian endive for smaller portions)

Cook the chicken breast and put in a food processor with the onion celery and mayo.

INGREDIENTS

1 avocado , shelled & crushed
1 1/2 tablespoons green onions , finely chopped
2 tablespoons lime juice , divided
3/4 teaspoon wasabi paste (or to taste)
3/4 lb crab, cooked & diced
5 green bell peppers , tops cut off and seeds removed
1/8 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)

Sesame Salmon Boats

INGREDIENTS

1 (7 3/4ounce)can red salmon (I use Bumble Bee Red Salmon)
1 avocado
crisp salad greens
lemon juice
1/4 cup mayonnaise , your choice for the amount of fat content
1/4 teaspoon dill weed
1/4 teaspoon garlic salt
2 teaspoons toasted sesame seeds
lemon slices
parsley , fresh, chopped

DIRECTIONS

Drain salmon.

Remove skin and bones, if desired; chill.

Halve the avocado; remove seed.

Ham Salad Fruit Boats

INGREDIENTS

1 small pineapple , chilled
1 cup cubed cooked ham
1/2 cup sliced celery
1 tablespoon chopped green peppers
1/4 cup mayonnaise (or your choice of salad dressing)
1/2 teaspoon prepared mustard

DIRECTIONS

Cut pineapple in half lengthwise.
Remove hard core.
Cut around edge of fruit, leaving a rim about 1/2 inch thick.
