1/2cup half and half
4ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
DIRECTIONS
Bring half and half to simmer in heavy small saucepan. Reduce heat to low. Add chocolate; whisk until melted and smooth. Cool.

4 1/2 tablespoons unsalted butter , cut into small cubes
2 tablespoons strong-brewed espresso (we use Cuban coffee)
6 large eggs , separated
