INGREDIENTS

2 tablespoons sugar
1/2grated lemon zest
1/2grated orange, zest of
1 cup water
2 tablespoons orange juice
1 tablespoon lemon juice
1 teaspoon vanilla
1/2 pint raspberries , quartered
1/2 pint blueberries , quartered
1/2 pint strawberries , quartered

DIRECTIONS

In small pot, combine sugar, zest, and water.Bring to boil, reduce heat to low; simmer until syrupy, 25 minutes.
Remove from heat; add juices and vanilla.

Combine berries in bowl.Strain warm syrup over berries; marinate 30 minutes at room temperature before serving.

Spinach Salad With Berries and Curry Dressing

INGREDIENTS

6 ounces fresh spinach , torn into bite size pieces
1 cup strawberries , sliced thin
1 cup blueberries
1 small red onion , thinly sliced
1/2 cup chopped pecans
salad dressing
2 tablespoons balsamic vinegar
2 tablespoons rice vinegar
1 tablespoon honey
1 teaspoon honey
1 teaspoon curry powder
2 teaspoons Dijon mustard

DIRECTIONS

Wash and dry spinach.
Whip together ingredients.
Add to spinach and toss lightly.
Add berries onions and pecans.
Toss lightly and serve.

1 (7ounce)container Greek yogurt
4 ounces crystallized ginger , minced
6 ounces raspberries
6 ounces blackberries
6 ounces blueberries
8 ounces strawberries , hulled, halved (quartered if large)
CARAMEL
1 cup sugar
1/4 cup water

DIRECTIONS

BERRIES & YOGURT.
Mix yogurt and ginger in medium bowl; spread in large shallow serving bowl.
Cover yogurt with berries. (DO AHEAD Can be made 4 hours ahead; cover and chill.).

Mixed Berries With Honey Ricotta

INGREDIENTS

1/3 cup low-fat ricotta cheese
1 tablespoon honey (I prefer orange blossom honey)
1 tablespoon sugar substitute (Splenda)
2/3 cup mixed berries (I usually use sliced strawberries and blueberries)

DIRECTIONS

Mix the ricotta, honey and splenda until well blended.
Sprinkle with berries.
Enjoy.
