Stewed Tomatoes and Garbanzo Beans

INGREDIENTS

1 tablespoon olive oil
1 1/2 cups onions , sliced in half lengthwise, and then thinly sliced
2 garlic cloves , minced
2 (16ounce)cans garbanzo beans , drained
1 (28ounce)can whole tomatoes , do not drain
1/4 teaspoon salt (to taste)
1/8 teaspoon fresh ground black pepper (to taste)

Pickled Green Beans (Dilly Beans)

INGREDIENTS

4 lbs green beans , fresh
6 cups water , drinking
4 cups apple cider vinegar
1/2 cup salt , not iodized
1/3 teaspoon red pepper flakes (Per Jar)
1 garlic clove (Per Jar)
1 head dill (Per Jar)

In each canning jar put the dill, garlic and red pepper flakes.

Campanelle With Spinach and Beans

INGREDIENTS

1 (19ounce)can cannellini beans , drained
1/2 cup parmigiano-reggiano cheese , freshly grated
2 tablespoons extra virgin olive oil
1 garlic clove , minced
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
16 ounces campanelle pasta
1 (6ounce)package fresh spinach , coarsely chopped

DIRECTIONS

COMBINE the first six ingredients in a large bowl.

COOK pasta according to package directions; drain and return to pot. Stir in spinach to wilt.

ADD ingredients from large bowl to pasta and spinach; serve. Makes 4 to 6 servings.

INGREDIENTS

1 (15ounce)can pork & beans
1 medium onion , diced
4 slices bologna
1 tablespoon oil

DIRECTIONS

Cut up bologna & onion & saute in oil in skillet until brown.

Add pork & beans.

1 lb dried black beans , rinsed
7 cups water
1 cup diced fully cooked lean ham
5 garlic cloves , minced
1 1/4 teaspoons pepper

1 teaspoon salt
1 bay leaf
1/2 teaspoon liquid smoke (optional)
4 cups chicken broth
2 cups uncooked long grain rice
1 tablespoon red wine vinegar
2 teaspoons olive oil
3/4 cup shredded reduced-fat cheddar cheese
3/4 cup chopped sweet red peppers
2 tablespoons chopped jalapeno peppers
