DIRECTIONS

Peel bananas and place on foil. Melt butter and combine with juice, coconut liqueur, brown sugar, pour over bananas and seal foil tightly. BBQ until bananas are soft and liquid has caramelised.

Baked Bananas

INGREDIENTS

6 firm bananas
2 tablespoons butter , melted (no substitutions)
2 tablespoons lemon juice , fresh is best
1/3 cup sugar

DIRECTIONS

Preheat oven to 350°F.

Remove skins from bananas, cut in halves lengthwise and place in a shallow pan.

Mix butter, lemon juice and sugar together; cover bananas.

Bake for ten minutes and serve hot.

Mandarin Orange Jello W/ Bananas

INGREDIENTS

1 (8ounce)box Jello gelatin (orange or peach)
2 (8ounce)boxes tapioca pudding mix
1 (11ounce)can mandarin oranges
2 (6ounce)cans crushed pineapple
6-8 bananas

DIRECTIONS

Mix Jello with 1 cup boiling water.Mix well. Put in refrigerator to set.
Mix tapioca pudding with 3 cups water.
Cook over medium until boiling.Set aside.
When cooled, add to Jello setting in refrigerator.
Add drained mandarin oranges, crushed pineapple, and sliced bananas.
Put inrefrigerator until set.

Guatamalan Sweet Potatoes With Bananas

INGREDIENTS

4 sweet potatoes
2 bananas
1/2 cup butter
1/2 cup milk
1 egg , beaten
1/3 teaspoon salt
1/4 teaspoon nutmeg

DIRECTIONS

Boil sweet potatoes and peel them when tender.
Mash them with bananas.
Season with salt and nutmeg.
Add milk and egg and mix (add more milk if too dry).
Place in a greased 2-quart baking dish and bake at 350°F for 20 minutes.

Mixed Grain Muesli With Hazelnuts & Bananas

INGREDIENTS

1 1/4 ounces jumbo rolled oats
1/2 ounce barley
1/2 ounce wheat flakes
1 tablespoon sunflower seeds
1 1/4 ounces raisins
1/2 ounce unblanched hazelnuts , roughly chopped
1 banana , sliced into rounds
1 1/4 cups skim milk

DIRECTIONS

Mix together the rolled oats, barley flakes, wheat flakes, sunflower seeds, raisins and hazelnuts.
Divide between two bowls. Divide the banana between bowls and add the milk to serve.
