Banana Crumb Muffins

INGREDIENTS

1 1/2 cups all-purpose flour or
1 2/3 cups freshly ground soft wheat flour or oat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 large ripe bananas , mashed
3/4 cup sugar
1 egg , lightly beaten
1/2 cup butter or margarine , melted
TOPPING
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter or margarine

DIRECTIONS

In a large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well.
Stir into dry ingredients just until moistened.
Fill greased or paper-lined muffin cups three-fourths full.

Strawberry-Banana Yogurt Smoothie

INGREDIENTS

1 (6ounce)container low-fat strawberry yogurt
1 cup thawed cool whip strawberry whipped topping
1 medium banana , sliced
2 cups crushed ice

DIRECTIONS

PLACE all ingredients in blender container; cover. Blend on high speed 30 sec. or until well blended.

POUR evenly into 4 glasses. Serve immediately.

Grammy’s Strawberry Banana Smoothie

INGREDIENTS

1 cup frozen strawberries
3/4 cup sugar
1 banana
1 cup water or milk

DIRECTIONS

1.Place all ingredints in blender.

Easy, Moist Banana Pudding

INGREDIENTS

2 bananas
200 ml milk
3 slices bread (preferably wholewheat)
8 tablespoons jam (I used Royal Fig)
8 teaspoons cocoa
8 teaspoons nutmeg (optional)

DIRECTIONS

Slice bread into squares the size of the base of the small bowl you are going to use - you should have about 8.

Raised Banana Oatmeal Bread

INGREDIENTS

1 cup thick rolled oats
1 cup buttermilk or kefir
1/2 cup honey
1/4 cup butter or butter , spread
1/3 cup rice flour
2/3 cup warm water
2over ripe bananas
