During a summer trip to Santa Fe, Joan Coulliette of Sandy, Utah, had a wonderful baked apple pancake for breakfast at Atalaya restaurant.
The restaurant has closed, but we were able to get the recipe for the pancakes.

Cracker Barrel Baked Apple Dumplin’

INGREDIENTS

1 (17 1/2ounce)package frozen puff pastry , thawed
1 cup white sugar
3/8 cup dry breadcrumbs
3 tablespoons ground cinnamon
1 pinch ground nutmeg
1 egg , beaten
4 granny smith apples , peeled, cored and halved
1 cup confectioners’ sugar
1 teaspoon vanilla extract
3 tablespoons milk
pecan streusel
2/3 cup chopped toasted pecans
2/3 cup packed brown sugar
2/3 cup all-purpose flour
5 tablespoons melted butter

DIRECTIONS

Preheat oven to 425°F (220°C). Lightly grease a baking sheet.
Roll out each sheet of pastry to measure 12×12 inches. Cut into quarters, to make 8 - 6 inch squares.

Easy Bake Oven Baked Apple

INGREDIENTS

1 large apple
1/4 teaspoon butter
1/2 teaspoon sugar
ground cinnamon

DIRECTIONS

Wash large apple.
Slice across apples to make slices (rings) 1/2" thick.
Use center slices.
Remove center core.
Grease pan with butter.
Place apple slice in pan.
Sprinkle lightly with cinnamon, then with 1/2 teaspoon sugar.
Dot top with 1/4 teaspoon butter.
Bake about 20 minutes.

Baked Apple Custard

INGREDIENTS

2 medium free-range eggs
2 tablespoons fructose
2/3 cup natural sugar-free yogurt
1 teaspoon arrowroot
1 teaspoon natural vanilla extract
1 apple , cored and sliced thinly

DIRECTIONS

Preheat oven to 325°F
Whisk all ingredients exceptfor the apple together until smooth. Divide apple slices into the bases of 2 heat-proof ramekins. Pour custard mix over the top. Bake in oven for 30 minutes or until custard is set and golden on top.

Baked Apple Pancakes

INGREDIENTS

4 apples , peeled and sliced
3 tablespoons lemon juice
2 tablespoons butter
6 eggs
1 teaspoon salt
1 cup milk
1 cup flour
2 tablespoons sugar

DIRECTIONS

Toss apples in lemon juice.

Melt butter in skillet and sautee apples until glazed (about 5 minutes).

Beat eggs, salt, milk & flour until smooth.

Combine ingredients in a greased cake pan.

Bake at 425 for 20-25 minutes.
