1 slice rye bread
1 tablespoon beetroot dip
1/3 avocado
DIRECTIONS
Toast the bread until its warm but not completely toasted.
Spread with beetroot dip.
Place sliced, or mashed beetroot on top.

6 slices bacon
3 tablespoons vegetable oil
1 tablespoon white vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
3-4 drops Tabasco sauce
2 medium avocados , sliced
2 medium tomatoes , cut into cubes
1 small onion , chopped (1/4 cup)
4-6 cups salad greens
DIRECTIONS
Cook bacon in 10-inch skillet until crisp; drain and crumble.
Mix oil, vinegar, salt, pepper and tobasco sauce. Pour over avocados in bowl; toss. Add bacon bits, tomatoes and onion. Refrigerate about 2 hours.
Serve on salad greens.

1 ounce goat cheese
1/4 teaspoon onion powder
1 1/2 tablespoons chopped cilantro
1/8 teaspoon black pepper
1 dash cayenne pepper
1/8 teaspoon salt
1 tablespoon freshed squeezed lime juice
DIRECTIONS
Combine avacado with goat cheese.
Add remaining ingredients.
Adjust salt to taste.
Let stand 1 hour at room temperature to let flavors blend.
