INGREDIENTS

1 cup all-purpose flour or whole wheat flour
1/2 cup oat bran
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ginger
1 teaspoon nutmeg

3/4 cup brown sugar , packed
1/2 cup unsweetened applesauce

3/4 cup low-fat granola

1 cup apples , chopped
2 tablespoons brown sugar
1/4 cup low-fat granola

DIRECTIONS

Whisk together the flour, oat bran, baking soda, baking powder, and spices.
Mix 3/4 c brown sugar, applesauce, egg whites, and vanilla in a large bowl.
Add flour mixture and mix quickly.
Fold in 3/4 cup granola, raisins, and apples.

INGREDIENTS

1/2 lb cabbage leaves (green or purple)
1 ounce dried porcini mushrooms
5 tablespoons unsalted butter
1 tablespoon extra virgin olive oil
2 garlic cloves , peeled
1 sprig rosemary
1/4 cup water
1 cup red wine
4 tablespoons all-purpose flour
1 quart whole milk, heated
1 pinch nutmeg
1 ounce pecorino cheese, freshly grated
1 ounce parmigiano-reggiano cheese , freshly grated
10 sheets no-boil lasagna noodles (Oven-Ready)
to taste salt

Autumn Main Dish Salad

INGREDIENTS

1/2 head Chinese cabbage , cut in shreds (nappa)
1 lb ham , diced
2 apples , diced
1/2 cup chopped walnuts
1-2 stalk celery , thinly sliced
1/2 lb mozzarella cheese , cubed (optional)
1 green pepper , chopped (optional)
balsamic vinaigrette (I suggest Basic Vinaigrette Dressing With 8 Variations without the optional Italian seasoning)

DIRECTIONS

Toss all salad ingredients together in a large bowl.

1/4 cup peanut oil
3/4 cup millet
1 lb winter squash
1 cup fresh cranberries
1/3 cup raisins (dark or golden)
1/4 teaspoon salt
1/2 teaspoon pepper , freshly ground
1 tablespoon sage leaves , minced (or 1 teaspoon dried)
2 tablespoons maple syrup
2/3 cup chicken stock (or vegetable)
2/3 cup cream (1/2 & 1/2)
