INGREDIENTS

2 1/2 cups mashed sweet potatoes
1/4 cup evaporated milk
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla
1/4 cup butter
1/3 cup flour
1/4 cup butter
1 cup brown sugar
1 cup chopped nuts

DIRECTIONS

Combine first six ingredients then pour into pie dish.Combine four topping ingredients and sprinkle over the top.Bake @ 350 for 25 minutes.

Auntie Goldie Mae’s Shoe Peg Casserole

INGREDIENTS

1 (15ounce)can shoe peg corn
1 (16ounce)can French style green beans
1 cup grated cheddar cheese
1 (10 3/4ounce)can cream of celery soup
2 teaspoons minced garlic
1 (8ounce)container sour cream
johnny’s seasoning salt
15-25Ritz crackers (crushed)
1/2 cup butter

DIRECTIONS

Preheat over to 350°F.
Spray 9×13-inch casserole dish.
Layer corn and green beans in casserole dish, combine soup, sour cream, garlic, Johnny’s, grated cheese and pour over vegetables. melt butter and combine with crackers. Spread dry mixture over top and bake for 30 minutes.

Auntie Mimi’s Fried Apricot Pies

INGREDIENTS

1 lb dried apricots
10biscuits (from the can)
cooking oil
sugar

DIRECTIONS

Cover dried apricots with water, and cook in a sauce pan till "jam" like texture.
Set aside to cool.
Roll out biscuits to 6-8′ circle’s.
Place 2-3 Tbs. of apricots in center of biscuit.
Fold biscuit in half. Seal with Fork.
Fry in med. hot cooking oil- until golden brown.
Sprinkle with Sugar while warm.
