Artichoke & Spinach Dip

INGREDIENTS

2 cups reduced-fat parmesan cheese, topping
10 ounces spinach (frozen or fresh)
1 (14ounce)can artichoke hearts (cut into small pieces)
1 tablespoon garlic (crushed or minced)
1 cup low-fat sour cream
1 cup low-fat cream cheese

DIRECTIONS

Mix thawed or fresh spinach and artichoke hearts (cut hearts into small pieces first). Mix in the remaining ingredients.

Artichoke - Cranberry Stuffing

INGREDIENTS

8 medium artichokes
2 cups carrots , chopped
1 cup onions , chopped
5 cups breadcrumbs
2 cups cranberries , chopped
1 teaspoon dried thyme
1/2 teaspoon ground allspice
