INGREDIENTS

  • 2 cups barley
  • 6 cups water
  • 1/4 cup olive oil
  • 1 lime, juice of
  • salt and pepper

DIRECTIONS

  1. Rince the barley and drain.
  2. Boil water in a casserole and add the barley.
  3. Cover and cook 1 hour at low heat or until barley is tender and water is absorbed.
  4. Add olive oil and lime juice.Salt and pepper if you want and serve.
