INGREDIENTS

  • 8 ounces neufchatel cheeseor cream cheese , softened
  • 2 cups Cool Whip Lite
  • 1/2 cup sour cream or light sour cream
  • 1/2 cup natural-style peanut butter (smooth and unsweetened)
  • 1/2 cup Splenda granular
  • 1 teaspoon vanilla
  • fresh fruit, to serve (especially good with bananas and berries)

DIRECTIONS

  1. With a hand mixer beat together all ingredients except fruit. Beat until smooth and creamy. Scrape the sides and bottom down a few times.
  2. Great right away but will firm up a little more if refrigerated an hour or more.
  3. Serve with fresh fruit of choice.
