INGREDIENTS

  • 1 1/4 cups Pamelas ultimate baking and pancake mix
  • 1 cup yellow cornmeal
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 2 eggs , beaten
  • 1 cup milk
  • 2 tablespoons butter , melted

DIRECTIONS

  1. Pre-heat oven to 375 degrees.
  2. Grease a 12-cup muffin tin.
  3. Mix all ingredients together.
  4. Fill muffin tins 3/4 full.
  5. Bake for 15-20 minutes.
  6. For cornbread: Follow directions above.Pour into a greased 8-inch square pan and bake for 20-25 minutes.Makes 9 servings.
