INGREDIENTS

  • 2 eggs
  • 1 tablespoon diced scallions or diced onions
  • olive oil
  • salt
  • pepper

DIRECTIONS

  1. Beat eggs.
  2. Heat skillet and pour light coating of olive oil.
  3. Heal oil for about a minute.
  4. Add diced scallions and fry for about 30 seconds.
  5. Add eggs.
  6. Fry for about 2 minutes or until eggs are desired consistency.I use a rubber spatula to break up the egg mixture as it fries.
  7. Salt and pepper to taste.
  8. Enjoy!
