INGREDIENTS

  • 1 (15ounce)can black beans , drained and rinsed
  • 1 1/4 ounces taco seasoning
  • 2/3 cup water
  • 6 cups bite-sized pieces lettuce
  • 1 medium red pepperor green pepper
  • 2 medium tomatoes , cut into wedges
  • 1/4 cup pitted olives
  • 1 cup corn chipsorcrushed crushed tortilla chips
  • 1 cup shredded cheddar cheese
  • 1/2 cup reduced-fat thousand island dressing

DIRECTIONS

  1. Heat beans, water and taco seasoning in small sauce pan over medium heat, stirring occasionally until heated.
  2. Toss lettuce, bell pepper, tomatoe, olives and chips in large bowl.
  3. Spoon bean mixture, cheese and drizzle dressing over lettuce mixture and toss.
  4. Serve immediately.
