INGREDIENTS

  • 1 orange , pared and sectioned
  • 1 medium cucumber , sliced
  • 1 small onion , sliced and separated into rings
  • crisp salad greens
  • orange Dressing (or use bottled French dressing)

  • 1/4 cup oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon orange zest
  • 2 tablespoons orange juice
  • 1 tablespoon sugar
  • 1/8 teaspoon salt
  • 1/8 teaspoon dry mustard

DIRECTIONS

  1. Toss orange sections, cucumber slices, onion rings and dressing in a bowl.
  2. Cover and refrigerate 1 to 2 hours.
  3. Serve over salad greens.
