INGREDIENTS

  • 2 (16ounce)cans black beans (drained)
  • 2 tablespoons oil
  • 3 lbs boneless pork shoulder , in 1-inch pieces
  • 4 carrots , cut in 1/4-inch pieces
  • 1 onion , chopped
  • 1jalapeno pepper, minced
  • 3 tablespoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons salt
  • 1 (28ounce)can whole tomatoes
  • 1 cup fresh cilantro , chopped

DIRECTIONS

  1. Add meat to 1 T. oil and brown meat. Remove.
  2. Add 1 T. oil to pan and add onions & carrots. cook 10 minutes.
  3. Stir in jalapenos, garlic, spices.
  4. Add tomatoes with juice and pork.
  5. Bring to a boil, reduce and simmer 2 hours.
  6. Add beans and fresh cilantro, cook five minutes more.
  7. Serve with choice of sour cream, shredded cheese and onions.
