INGREDIENTS

  • 1 cup chopped cooked corned beef
  • 1 cup chopped cooked potatoes
  • 1/4 cup finely chopped onions
  • 1 tablespoon snipped parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 tablespoons salad oil
  • 1/2 cup tomato juice

DIRECTIONS

  1. Mix meat, potatoes, onion, parsley, salt and pepper.
  2. Heat oil in 8-inch skillet.
  3. Spread meat mixture evenly in skillet, brown over medium heat, turning frequently with wide spatula, about 10 minutes.
  4. Stir in tomato juice.
  5. Reduce heat, cover and cook until liquid is absorbed, about 10 minutes.
