INGREDIENTS
- 2 cups carrots , pulp
- 1/2 cup pineapple , pulp
- 1/2 cup apples , pulp
- 1 cup coconut
- 3 cups flour
- 1 tablespoon baking soda
- 1 tablespoon cinnamon
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup honey
- 4 eggs
- 1 cup canola oil
- 1 tablespoon vanilla
- 1 1/2 cups pecans
DIRECTIONS
- carrot, pineapple and apple pulp can be made by pulsing in a food processor.
- Add honey, oil and vanilla. Mix well.
- Sift dry ingredients together and then add until just blended.
- Fold in coconut and pecans.
- Pour into a greased and floured 9×13 pan.
- Bake at 350°F for 50-60 minutes.
- To make muffins: Fill muffin pans 3/4 full and bake at 350°F for 40-45 minutes.
