INGREDIENTS

  • 2 cups carrots , pulp
  • 1/2 cup pineapple , pulp
  • 1/2 cup apples , pulp
  • 1 cup coconut
  • 3 cups flour
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup honey
  • 4 eggs
  • 1 cup canola oil
  • 1 tablespoon vanilla
  • 1 1/2 cups pecans

DIRECTIONS

  1. carrot, pineapple and apple pulp can be made by pulsing in a food processor.
  2. Add honey, oil and vanilla. Mix well.
  3. Sift dry ingredients together and then add until just blended.
  4. Fold in coconut and pecans.
  5. Pour into a greased and floured 9×13 pan.
  6. Bake at 350°F for 50-60 minutes.
  7. To make muffins: Fill muffin pans 3/4 full and bake at 350°F for 40-45 minutes.
