INGREDIENTS

  • 4 cups diced zucchini
  • 1/2 cup chopped onions
  • 1 garlic clove , crushed
  • 2 tablespoons butter or margarine , melted
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 (5ounce)can evaporated milk
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese

DIRECTIONS

  1. Saute zucchini, onion, and garlic in melted butter in a large skillet 5 minutes or until vegetables are crisp-tender; remove from heat.
  2. Sprinkle flour and salt over sauteed vegetables, tossing gently to combine.Stir in evaporated milk, sour cream, and cheese.
  3. Spoon zucchini mixture into a 1 quart casserole dish.Bake at 375 degrees for 20 minutes or until cheese melts and it is hot and bubbly.
