INGREDIENTS
- 1 1/3 cups quinoa , rinsed
- 2 large mangoes , cubed
- 1 jalapeno chile , seeded and diced
- 3 green onions , sliced
- 1/2 cup curry vinaigrette
- 1/3 cup roasted almonds
DIRECTIONS
- Bring 3 cups of water to boil and add 1/2 tsp of salt and the quinoa, lower the heat, cover and simmer until the quinoa is tender (12-15 minutes.)Drain.
- Toss all of the ingredients together with the drianed quinoa except for the almonds, add those just before serving.
- Enjoy!
