INGREDIENTS

  • 1 1/3 cups quinoa , rinsed
  • 2 large mangoes , cubed
  • 1 jalapeno chile , seeded and diced
  • 3 green onions , sliced
  • 1/2 cup curry vinaigrette
  • 1/3 cup roasted almonds

DIRECTIONS

  1. Bring 3 cups of water to boil and add 1/2 tsp of salt and the quinoa, lower the heat, cover and simmer until the quinoa is tender (12-15 minutes.)Drain.
  2. Toss all of the ingredients together with the drianed quinoa except for the almonds, add those just before serving.
  3. Enjoy!
