INGREDIENTS

  • 1 lb pinto beans
  • 3 quarts water
  • 1/2 lb salt pork , cut up
  • 1 medium onion , chopped
  • 1 minced garlic clove
  • 6 ounces tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon marjoram

DIRECTIONS

  1. Wash beans. Place beans in large pot cover with cold water and soak overnight.
  2. When ready to cook bring beans to a boil. Reduce heat and simmer 1 hour.
  3. Stir in remaining ingredients cover and simmer 3 hours or till beans are tender.
  4. Add more water if necessary.
