INGREDIENTS

  • 1 lb fingerling potatoes or baby red potatoes , with peels
  • 1/4 cup wasabi mayonnaise
  • 4 green onions , rinsed and sliced with tops
  • 1/2 cup red peppers, and
  • yellow peppers, roasted, drained & chopped
  • sea salt , to taste
  • fresh ground pepper , to taste

DIRECTIONS

  1. Cook potatoes until slightly undercooked or follow package directions.
  2. Cut into chunks or break apart into medium pieces.
  3. Add wasabi mayo, sliced onions and chopped peppers.
  4. Combine, chill & serve.
  5. NOTES: to reduce the heat factor, cut wasabi mayo with your favorite mayonnaise.
