INGREDIENTS

  • 2 cups flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup prepared eggnog
  • 1/2 cup dark rum
  • 5 tablespoons unsalted butter , melted
  • 1 egg , beaten
  • 1/2 teaspoon freshly grated nutmeg

DIRECTIONS

  1. Heat oven to 400º.
  2. In a large bowl mix flour, sugar, baking powder, and salt.
  3. Add eggnog, rum, butter, beaten egg, and nutmeg.
  4. Stir only until mixed.Do not over mix or muffins will become rubbery.
  5. Spoon batter into prepared muffin tins (use either paper liners or grease each mold) and sprinkle tops with some nutmeg if desired.
  6. Bake 20 minutes or until tester comes out clean.
  7. Remove from oven and turn muffins out onto a wire rack to cool.
  8. Store in an airtight container.
  9. Muffins can be frozen in zip lock bags.
