INGREDIENTS
- 2 cups flour
- 2/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup prepared eggnog
- 1/2 cup dark rum
- 5 tablespoons unsalted butter , melted
- 1 egg , beaten
- 1/2 teaspoon freshly grated nutmeg
DIRECTIONS
- Heat oven to 400º.
- In a large bowl mix flour, sugar, baking powder, and salt.
- Add eggnog, rum, butter, beaten egg, and nutmeg.
- Stir only until mixed.Do not over mix or muffins will become rubbery.
- Spoon batter into prepared muffin tins (use either paper liners or grease each mold) and sprinkle tops with some nutmeg if desired.
- Bake 20 minutes or until tester comes out clean.
- Remove from oven and turn muffins out onto a wire rack to cool.
- Store in an airtight container.
- Muffins can be frozen in zip lock bags.
