INGREDIENTS

  • 1 3/4 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup vegetable shortening
  • 3/4 cup creamy peanut butter or
  • 1 cup chunky peanut butter
  • 1/3 cup brown sugar , packed
  • 1 1/2 cups white sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 2/3 cup coconut

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Combine flour, baking powder and salt in a bowl, set aside.
  3. Combine shortening, peanut butter, sugar, eggs and vanilla in a large bowl. Mix until well blended.
  4. Blend in reserved dry ingredients, stir in coconut. Batter will be very stiff.
  5. Spread batter into a well-greased 13×9x2in baking pan.
  6. Bake at 350 degree for 25-35 minutes, or until golden brown.
  7. Cut into bars when completely cool.
