INGREDIENTS
- 1 zucchini , halved lengthwise and sliced
- 2 ounces lean ham , julienned
- 1/3 cup chicken broth
- 1/3 cup mayonnaise
- 1/4 teaspoon black and red pepper blend
- 8 ounces linguine , cooked
- parmesan cheese , grated
DIRECTIONS
- Coat a skillet with non-stick cooking spray.
- Add zucchini and ham.
- Saute over medium heat until zucchini is crisp-tender, about 4 minutes.
- Whisk broth mayonnaise and pepper blend until smooth.
- Toss zucchini, ham, and mayonnaise mixture with hot linguine.
- Sprinkle with Parmesan cheese.
