INGREDIENTS

  • 4 medium mashed ripe bananas
  • 2 tablespoons vegetable oil
  • 1/4 cup plain yogurt
  • 1/3 cup brown sugar , packed
  • 1 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 cup crystallized ginger , chopped fine
  • 1/2 cup dark chocolate , chopped into small chunks

DIRECTIONS

  1. Sift flour with baking soda, powder and salt.Set aside.
  2. Mash bananas in a large mixing bowl.Add oil, yogurt, egg, and vanilla. Mix.Add brown sugar and blend well.
  3. Stir in dry ingredients until well mixed but don’t over-beat.Add chocolate and crystallized ginger.Spoon into oiled muffin tins.
  4. Bake at 350’ for 15-20 minutes or until muffins spring back when touched in the centre.
