INGREDIENTS

  • 1 lb bacon
  • 2 onions (diced)
  • 4 garlic cloves (sliced)
  • 1 (28ounce)can diced tomatoes (drained)

DIRECTIONS

  1. Cut Bacon slices into 4 pieces and cook over medium heat in a large sauce pan. You may have to do this in 2 batches.
  2. Cook bacon until a golden brown, but NOT cripsy. You do not want any burnt edges.
  3. Remove bacon and place on paper towels to absorb fat.
  4. Add roughly diced onions and cook on medium heat until transluscent.
  5. Add your garlic and continue cooking until oinions appear to start turning golden brown.
  6. Strain mixture with a sieve over a bowl, as you want to reverse the bacon fat.
  7. Put mixture back into pan and add a half of the diced tomoatoes.
  8. Cook, toss and turn for about 5 minutes.
  9. Return bacon and bacon fat back into mixture and heat through.
  10. Pour over your favourite pasta and sprinkle with cheese and fresh basil leaves.
