INGREDIENTS

  • 2 lbs zucchini , unpeeled and coarsely grated
  • 1 medium onion , Minced
  • 1 garlic clove , Minced
  • 1 tablespoon butter or margarine
  • 2 cups hot water
  • 2 chicken bouillon cubes
  • 1/2 teaspoon lemon juice
  • 1 teaspoon salt
  • 1 tablespoon chopped chives

DIRECTIONS

  1. Combine Zucchini, onion, garlic and butter in frying pan.Saute slowly while covered for about 10 minutes or until soft.
  2. Add water, chicken bouillon cubes, lemon juice and salt.Heat.
  3. Stir in chives.
