INGREDIENTS

  • 3 lbs shrimp (peeled and deveined)
  • 1/2 cup oil
  • 3 eggs , beaten
  • 1 cup all-purpose flour
  • 6 ounces zatarains bake and crisp mix (Chicken or Seafood flavors will work)
  • 1/2 cup milk
  • 1 dash salt
  • 1 dash garlic powder
  • 1 dash black pepper
  • oil (for frying, Canola or peanut is best)

DIRECTIONS

  1. Heat oil in a non-stick skillet.
  2. Combine 1/2 cup of oil with eggs. Beat well.
  3. Add remaining ingredients making sure that the mix is nice and thick.
  4. Dip the shrimp into batter to coat them. Make sure that the batter is sticking properly to the shrimp so that it will fry properly.
  5. Drop shrimp into the hot oil in the skillet. Fry for about a minute or until you notice that it is golden brown. Don’t evercook them, it will make them tough!
  6. Use a spatula or splotted spoon to remove the fried shrimp. Have a large platter ready with newspaper/paper towels to drain the grease.
  7. Repeat as many batches as needed. With a standard skillet it will take about 5 batches at least until all are cooked.
  8. Be sure to disinfect counter tops/oven surfaces, and sinks used to prepare shrimp to prevent food poisoning and reduce fish smell.
  9. Keep peelings and shrimp refuse sealed in a ziplock bag and dispose of it promptly or store in freezer until trash day.
