INGREDIENTS

  • 1 head cauliflower , cut into bite-sized pieces
  • 1/4 cup butter
  • 1 medium onion , chopped
  • 2 tablespoons flour
  • 2 cups chicken stock
  • 2 cups milk or cream
  • 1/2 teaspoon worcestershire sauce
  • 3/4 teaspoon salt
  • 1 cup cheddar cheese , grated

DIRECTIONS

  1. Cook cauliflower in about 1 cup water. Drain and reserve liquid. Set cauliflower aside.
  2. Melt butter, add onion, and cook until soft.
  3. Blend in flour, add stock and bring to a boil, stirring well. Stir in 1 cup cauliflower liquid, milk, Worcestershire sauce and salt. Add cauliflower and cheese and heat through.
