INGREDIENTS

  • 2 1/2 teaspoons Dijon mustard
  • 1/4 cup champagne vinegar
  • 1 teaspoon honey
  • 1 1/2 tablespoons water
  • 1 cup extra virgin olive oil
  • 1 large minced shallot
  • 1/3 cup minced fresh basil
  • 1 lb baby mixed greens
  • 1diced tomato
  • 1/4 cup dried cranberries
  • 1/4 cup diced dates
  • 3 tablespoons pine nuts
  • 1/4 cup fresh goat cheese

DIRECTIONS

  1. Combine mustard, vinegar, honey and water.
  2. Briskly whisk.
  3. Slowly add in olive oil, shallots and basil.
  4. Toss with mixed greens.
  5. Top with additional ingredients to taste.
