INGREDIENTS

  • 2 lbs spinach
  • 1 cup rice
  • 1 onion (finely chopped)
  • 1 tablespoon fresh dill (finely chopped)
  • 1crushed garlic clove
  • 1lemon, juice of, only
  • 3 cups water
  • salt and pepper
  • 1 tablespoon vegetable oil

DIRECTIONS

  1. Heat oil and fry onion until golden.
  2. Add dill, spinach salt, pepper and all the water.
  3. When boiling add rice and cook over a low heat until no water is left.
  4. Pour over lemon juice and stir to serve.
