INGREDIENTS
- 2 lbs spinach
- 1 cup rice
- 1 onion (finely chopped)
- 1 tablespoon fresh dill (finely chopped)
- 1crushed garlic clove
- 1lemon, juice of, only
- 3 cups water
- salt and pepper
- 1 tablespoon vegetable oil
DIRECTIONS
- Heat oil and fry onion until golden.
- Add dill, spinach salt, pepper and all the water.
- When boiling add rice and cook over a low heat until no water is left.
- Pour over lemon juice and stir to serve.
