INGREDIENTS

  • 1 lb rectangle shaped queso fresco (I like the one from Costco)
  • 10 ounces bagel chips or crostinior crackers
  • 5 ounces raspberry jellyor blackberry jellyor apricot jamor pepper jelly

DIRECTIONS

  1. Preheat an electric griddle or VERY nonstick pan on medium heat.
  2. Cut cheese into 2" by 1" retangles that are about 1/2" thick.
  3. Spray griddle or nonstick pan with cooking spray and place the cheese rectangles, leaving a little space between them, on the giddle or non stick pan.
  4. Let the cheese brown on that side, about 3minutes, then flip to brown on the other side.
  5. Serve cheese on bagel chips, crostini, or other crackers with a dap of jelly or jam on top.
