INGREDIENTS

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups brown sugar
  • 2 cups zucchini , grated
  • 3 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons cinnamon
  • 1 cup chopped walnuts or raisins
  • 1 cup chocolate chips (optional)

DIRECTIONS

  1. Line 2 loaf pans with parchment.
  2. Mix everything together and mix well.
  3. Set oven to 350F and bake for 60 minute.
