INGREDIENTS

  • 2 tablespoons Dijon mustard
  • 1 large egg
  • 1/2 cup dried Italian seasoned breadcrumbs
  • 1 lb chicken breasts
  • 2 teaspoons olive oil
  • 2 tablespoons chicken broth
  • 1 tablespoon lemon juice
  • 1 tablespoon minced parsley
  • lemons , sliced (optional)

DIRECTIONS

  1. Combine the mustard and egg in a small bowl.Place the bread crumbs on a sheet of wax paper.Dip the chicken in the egg, then in the bread crumbs to cover.
  2. Heat the oil in a large skillet over medium heat.Cook the chicken in the oil until golden and cooked through, about 5 minutes on each side.Transfer to a plate.
  3. Add the broth and lemon juice to the skillet.Simmer 30 seconds, stir in the parsley.
  4. Pour the sauce over the chicken and garnish with the lemon sliced, if desired.
