INGREDIENTS

  • 1 1/2 cups chopped cooked chicken
  • 1/4 cup diced cucumbers
  • 1/4 cup minced celery
  • 2chopped scallions
  • 1 tablespoon finely chopped fresh parsley
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1/8 teaspoon pepper
  • 4 tortillas
  • 4 lettuce leaves

DIRECTIONS

  1. Combine everything but the tortillas and lettuce in a bowl.
  2. Spoon onto warm tortillas and and the lettuce.
  3. Roll up and fasten with toothpicks.
