INGREDIENTS

  • 2 boneless pork loin chops , 1/2-inch thick
  • 1 teaspoon canola oil
  • 1/4 cup sweet onions , chopped
  • 1/3 cup green peppers , chopped
  • 1/3 cup red peppers, chopped
  • 1/2 cup v 8 vegetable juice
  • 1 dash salt
  • 1 dash pepper

DIRECTIONS

  1. In a large skillet coated with nonstick spray, brown pork chops in oil on both sides.
  2. Remove and keep warm.
  3. In the same skillet, saute onion and peppers until crisp-tender, stirring to remove any brown bits from the pan.
  4. Stir in the V8 juice, salt and pepper.
  5. Return chops to the pan.
  6. Bring to a boil.
  7. Reduce heat, cover and simmer for 8-10 minutes or until meat is tender.
