INGREDIENTS

  • 400 g chicken or pork , etc
  • Rub

  • 1 tablespoon fish sauce
  • 1 tablespoon red curry paste
  • 1/2 lime, juice of
  • Vegetables

  • 1diced red onion
  • spring onions
  • 1 capsicum , diced
  • 2 stalks celery , diced
  • 1 cup mushrooms , sliced
  • 400 ml evaporated skim milk
  • olive oil
  • Rice

  • 500 ml stock
  • 2 cups rice

DIRECTIONS

  1. Cook rice in the stock by absorbtion.
  2. Make and mix the rub.
  3. Coat meat.
  4. Chop and cook vegetables.
  5. Cook meat.
  6. Deglaze pan with evaporated milk and reduce.
  7. Serve over rice.
  8. Garnish with fresh corriander and basil.
